
We entered our Caviar Era in advance of Valentine’s Day, and it proved so popular we intend to revel in it until further notice. But we’re not alone. Humans have been enjoying the fruits of the sturgeon for over 250 million years. This prehistoric, protein-packed fish abounded in the waters surrounding Asia, Europe, and the Americas.
The Greeks enjoyed caviar at their finest banquets dating back to the 4th Century B.C., and the Persians gave them their current name and began curing the roe. Some of the most delicious and revered caviar comes from the Ossetra sturgeon, which has a smooth, rich, and almost buttery taste. We have sourced caviar from Sturia, a sustainably minded French producer that meticulously controls every element of its production process. Their sturgeons are not fed antibiotics, growth hormones, or GMOs.
