Do you leave Arlington dreaming of our Hazelnut Paris-Brest? Joyzanne Pereira, our Head Pastry Chef, is to thank

Joyzanne was among the first hires at Arlington after receiving a phone call from her friend Luiana Vale, who is Arlington’s Sous Chef. “I can’t say in words how happy I am to be part of the success of Arlington,” says Joyzanne, who previously worked for Jeremy King at Brasserie Zédel. A native of Brazil, she grew up baking, both at home and in her mum’s pastry shop. “It’s my heritage,” she says. Her first culinary success was a coconut and dulce de leche cake covered in Italian meringue, which she made for her mother’s birthday. At Arlington, she loves incorporating seasonal ingredients in her desserts, but when she’s dining with us, she often falls back on the Iced Berries. “The simplicity!” she says. Her love of baking is rivalled by her love of nature, and on her days off, she often walks around the Tottenham Marshes near her home in North London. She also enjoys dining out with her husband and friends and visiting London’s cultural institutions, especially The British Museum. Next time you see her, do say hello.
