WHAT ARE THE KEY ELEMENTS REQUIRED FOR A POST-THEATRE DINNER?
A warm welcome, and no rush to leave. Like a good story, there’s a distinct beginning, middle and end to a meal. To me, great service is about steering the whole thing without us eaters noticing. You want to be kept to time by an invisible hand. And, obviously, food and drinks made with love.
WHAT DO YOU VALUE MOST IN A DINNER COMPANION?
Good conversation and laughter. I appreciate people who listen and ask questions. People who dare to be open and honest are, to me, the most exciting company, because the conversation can go anywhere.
WHAT DID YOU EAT AND DRINK TODAY?
I had my first-ever martini—well, actually, it was a “half” martini, recommended by Jeremy King, who said if I liked it, I could have the other half. (I did.) I started with Dressed Dorset Crab and Celeriac Remoulade, which were delicious. We all ordered the catch of the day (which was Whole Grilled John Dory) and shared lots of sides— mash, spinach, green beans and fries (because you have to have fries). For dessert, we shared three pretty decadent choices—Paris-Brest, Mousse aux Deux Chocolats, and the Hokey Pokey Coupe. They were perfect.
WHAT IS THE BEST ADVICE, RESTAURANT OR OTHERWISE, YOU HAVE EVER RECEIVED?
Expect discomfort in things that are important. Growth involves pain. Don’t chase pleasure to avoid it. (Although there’s a lot to be said for pleasure.)
WHAT ARE YOU WORKING ON AT THE MOMENT?
I am directing Golden Boy, by Clifford Odets, with the amazing Josh O’Connor. We’ve been collaborating for a while now, which is hugely beneficial. Golden Boy will open at the Almeida theatre in 2026. I’m also casting theatre projects in London and New York, and developing scripts for film and television.
